The flavors found in Nicaraguan Coffee are unique to Central America.

Acidity levels are Balanced, with a sweet caramel aftertaste, a medium to full body, and chocolate finish.

From the very first batch of coffee we roasted in 1998, the goal of meeting the farmers, whose life work it is to grow delicious coffee, has been a driving force in our approach to coffee buying.

This harvest we cupped over 15 samples from the Canales Family at the Prodecoop Mill, and again at Norman's home.
I think the brothers were a little surprised that I fell in love with Norman's wife Brenda's lot from her farm El Paraiso! I don't think there was any jealousy between the Brothers that Brenda's lot was the one. Her coffee is just as amazing as her culinary skills.

The Don Pio plot has been my favorite area of the Los Delirios farm for many years. I can pick this coffee out of twenty different samples every harvest. 

Don Pio has been our favorite as an ingredient in our Signature Espresso, as well as a coffee that customers come in and ask for by name.
2025 has us roasting the Finca Paradise, to take the place of Don Pio.
Such is the way with an agricultural product like coffee.

Contracts were made pre-tariff announcements.
We paid a 10% tariff, and worked very hard to move the coffee to the port & up to Houston before the 18% tariff went into effect.
We started out paying more for this lot with a handshake and a hug.  The threat of tariffs didn't change our contracts. All coffee is more expensive this year.
